PALEO FRIENDLY. Our most requested soup! This is a great summer soup, very light and refreshing! Zucchini, green beans, lemongrass, onions, chicken breast pieces and lime juice simmer in a refreshing broth of light coconut milk, keffir lime leaves (a thai specialty) and chicken broth. Very authentic tasting!
Thaw Completely. In a medium saucepan, heat 1 tablespoon oil. Saute contents of chicken and vegetable bag on Medium heat for 6 minutes, until chicken is white on the outside. Add bag of Coconut Milk/Chicken Stock. Simmer on medium heat for 20 minutes, until chicken is cooked through and the flavors have blended. Remove lime leaf before serving.
