THIS MEAL BEST IF NOT FROZEN BECAUSE OF ALL THE FRESH VEGETABLES.  June signifies the transition from spring to summer and allows us to take advantage of all the fresh and local produce!  You will bake this hearty risotto in the oven for an easy weeknight meal.  Full of local organic sugar snap peas, asparagus, tomatoes, spinach and caramelized leeks, you will get your full serving of vegetables and then some!  Parmesan cheese and a touch of mascarpone cheese help create the creaminess and extra flavor.  The whole meal bakes in 1 dish for easy cleanup!
