Feel like you are dining in Europe on this healthy and delicious meal. Zucchini, broccoli, roasted red peppers, artichoke hearts, kalamata olives, and parmesan cheese are baked in a white wine sauce, then served over pasta with a very light sauce of vegetable broth, half & half and feta cheese.

Ingredients- chicken breasts, artichoke hearts, kalamata olives, basil, parmesan cheese, feta cheese, chicken stock, white wine, whole wheat or gluten free pasta, garlic, tomatoes, half and half.
Cooking InstructionsMediterranean Chicken with Pasta
Thaw completely. Pasta- Cook pasta in boiling water for 10 minutes (8 min for Gluten Free), or until done. Drain pasta and put back into pot. Chicken- Preheat oven to 350d. Pour bag of chicken into a baking dish and bake for 20-25 min, or until chicken is cooked through. Cut chicken into cubes and add everything from baking dish and the bag of half & half/broth to pasta. Heat on low for 3 min. Serve. HC Points- 8 pts
