Parmesan Eggplant over Pasta with Sauteed Spinach

Description:

 FRESH EGGPLANT CANNOT BE FROZEN.  An Italian tradition.  Thin slices of organic eggplant are dredged in a parmesan and breadcrumb mixture and baked to crunchy perfection.  We then top it off with our homemade marinara sauce and you'll feel like your in Italy.  Saute up the included spinach and serve over the whole wheat pasta we provide! This is a very kid friendly meal.  

 

 Gluten, Soy and Egg free.  Dairy/Casein free available.

Cooking Instructions

Thaw completely. Preheat oven to 375. Dredge chicken breasts in parmesan/breadcrumb mixture. Place in baking dish sprayed with oil. Cook chicken for 40 min uncovered or until no longer pink inside. Heat marinara sauce. Pour around chicken and serve.
