Thaw Completely. Put butter in a Large skillet. Let simmer over medium heat for 5 minutes or until you get that browned aroma- but don't let burn. While that is cooking, dredge mahi in almonds/breadcrumbs. Put mahi in skillet- don't crowd them. Cook on medium heat for 5 min, turn over and cook another 4-5 min, or until fish flakes easily with a fork. Rice- heat in the microwave or a skillet until warmed through. Corn- soak corn (in husks) in water for 15 min or wrap in foil. Bake at 400d for 15-18 min, or Grill on medium heat for 15 minutes. HC points- 8pts based on 3 servings for a half, 6 for a full.
