We've taken all the wonderful flavors of a caprese salad, paired it with salmon and turned it into a dish everyone is sure to love! Very simple, yet full of flavor- wild salmon is marinaded in pesto (dairy and nut free), then topped with basil, fresh tomatoes, a touch of garlic, fresh mozzarella, smoked mozzarella and baked in the oven. Doesn't get any easier than that! Drizzle with a balsamic reduction (on the side). Serve with the included mashed potatoes- Easy, elegant, family and company friendly!
