Description:

 Browned grass fed butter (optional, can swap with olive oil, coconut oil, avocado oil) adds so much flavor to this almond encrusted fish- and the great thing is a little goes a long way so it's still a really healthy dish!  Cooked on the stove-top in minutes- it's an easy dish that appeals to everyone because of it's mild taste!!  Comes with medley of veggies (green beans, carrots, bells, onions, tossed in olive oil and smoked paprika, salt and pepper). Also comes with a lemon sauce to drizzle over the final product!

 

Cooking Instructions

Thaw Completely.  Put butter in a Large skillet.  Let simmer over medium heat for 5 minutes or until you get that browned aroma- but don't let burn.  While that is cooking, dredge mahi in almonds/breadcrumbs. Put mahi in skillet- don't crowd them.  Cook on medium heat for 5 min, turn over and cook another 4-5 min, or until fish flakes easily with a fork.  Rice- heat in the microwave or a skillet until warmed through.  Corn- soak corn (in husks) in water for 15 min or wrap in foil.  Bake at 400d for 15-18 min, or Grill on medium heat for 15 minutes. HC points- 8pts based on 3 servings for a half, 6 for a full.
